It is day 7 without a computer. My laptop decided it no longer likes it’s operating system and here I am writing this post on my iPhone.
Time away from email however got me into the kitchen last night to whip up a fine batch of salsa verde.
Salsa verde features the illustrious tomatillo – a green tomato looking fruit that grows within a husk. I happened upon two giant bags of them in the discount section of my vegetable stand in Columbia City so it was time for the making of a large vat of green salsa for the cost of a jar retail.
Salsa Verde
1lb tomatillos
1 medium red onion
1 small bunch cilantro
4 jalapeños
5 cloves garlic
1 tsp salt
1 tsp black pepper
1 cup water
Step 1: Chop tomatillos and onion and place in a large saucepan with water, salt and pepper. Heat until tomatillos are soft and remove from heat.
Step 2: Chop garlic, jalapeño, and cilantro together in a food processor. Add everything to the tomatillos and onions and stir thoroughly.
Step 3: Scoop everything into a food processor and blend until smooth.
Step 4: Place in jar or container, let cool and place in refrigerator overnight or at least three hours for flavor to mature.
Step 5: Enjoy tasty salsa.
