A whole local Florida caught yellowtail snapper and dinner with Dad and Step-mom Beverly was a great opportunity to try a salt bake.
Step 1: Have a whole fish (scales on is ok) about 1and a half pounds.
Step 2: Rinse fish in cold water, pat dry and season the interior belly with pepper and fresh green herbs of your choice and fill with lemon slices.
Step 3: In a oven safe pan bigger than the fish pour an eighth of an inch of salt. Place bay leaves and sprinkle herbs over the salt. Lay the fish over the salt and herbs.
Step 4: Create the salt crust by blending 2 cups salt with 2 egg whites. Pour it evenly over the fish and even out with a table knife or spoon. Sprinkle salt over the top of the crust to coat any uneven areas.
Step 5: Bake fish for 30 minutes at 400 degrees.
Step 6: Remove fish from oven crack crust and peel skin from fish.
And enjoy a scrumptiously moist fish.
